Snow Fungus & Chinese Pear Dessert

Mummy makes this dessert when I'm well. It's supposedly good for throat and lungs. I like this dessert I will drink the soup and eat the pear! She jus asked Grandma to help make this today : )

Ingredients:
1 Chinese pear (Honey/Snow)
8-10 Red dates
2 Tbsp Apricot Kernels (Bei Xing and Nan Xing each 1 tbsp)
White fungus - soaked in warm water and divided into smaller florets
Rock Sugar to taste
2 litres water

Method:
1. Soak white fungus for about 20 minutes or until soft and rinse. Divide into florets.
2. Rinse dates and apricot kernels.
3. Peel and cut pear into 4 pieces with core removed.
4. Add 2 litres of water into a slow cooker, followed by pears, snow fungus and apricot kernels.
5. Simmer for approx. 1 1/2 hours.
6. Stir in yellow rock sugar before serving.

Variation: Replace snow pears with 1/2 small papaya
